Good Morning All!

I LOVE food, and always look for clean, whole foods that taste delicious and make me feel great too.

My father-in-law (Rod) spends countless hours tending to his beautiful vegetable garden and his tomatoes are definitely the star. Even though I feel like the Little Red Hen’s friends while devouring the fruits (vegetables) of his labor, it definitely hasn’t stopped me from doing so.

I wanted to showcase a healthy recipe that stars a summer vegetable and is sooo simple! FYI – You can eat this salad plain, and can turn it into awesome leftovers by using it as a topping for pasta or pizza!

(Recipe inspired by Ina Garten’s Tomato Feta Salad)

Ingredients:

8 pints grape tomatoes
1/4 cup white wine vinegar or white balsamic vinegar
1/4 cup olive oil
Sprinkle of sea salt/fleur de sel
Sprinkle of freshly ground pepper
1/4 cup chopped (or cut) fresh basil leaves
1/4 cup chopped (or cut) fresh parsley leaves
8 – 10 ozĀ feta cheese (I used the Belfiore brand from Whole Foods due to it’s natural and minimal ingredients)

Directions:

Cut cherry tomatoes in half and set aside. Combine remaining ingredients for dressing. Gently fold dressing into cherry tomatoes and serve. (Can be served cold or at room temperature.)

(above recipe is for 12 servings – I cut the recipe in half)
