I haven’t posted a recipe in a long while and I am going to change that!  Today, I am sharing a recipe for a breakfast cookie that is packed with nutrients and also tastes like a treat!  These are awesome because they are perfect for a quick mobile breakfast and also freeze really well so you can make a bunch and save them!

Ingredients:

1 1/4 cup whole wheat pastry flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons unsalted butter AND 1 apple (cored and pureed) (substitute for oil)
1/4 cup coconut sugar
1 egg
1/4 cup (1 small jar) strained baby pumpkin apple food (carrot/sweet potato/pumpkin would work great too!)
1 teaspoon vanilla extract
1/2 cup rolled oats
1/2 cup bran cereal flakes
1/3 cup raisins (can substitute chocolate chips)
1/3 cup walnut pieces, lightly toasted in a dry skillet for 2 minutes, until fragrant and chopped (can substitute other nuts – pecans/almonds/peanuts – or leave out entirely!)

Instructions:

Mix flours, nutmeg, cinnamon, baking soda and salt in a medium-sized bowl

Core apple and place in food processor (see below picture for consistency!)

Whip sugars, pureed apple, and butter via a standing mixer or hand-held mixer until sugars have dissolved

Add egg, baby food, and vanilla and beat 30 more seconds

Add flour mixture and beat 30 more seconds

Add oats, flakes, raisins and walnuts only until incorporated (dough will be a bit sticky and won’t stick together like normal dough)

Drop 3-4 tablespoons of dough on a cookie sheet per cookie until dough is gone (flatten until 1/4-inch thick)

Bake 12 minutes until they smell delish but are still soft, then transfer quickly to wire rack

So sorry for the quick post but off to bed for me!  My goal is to get to work by 8 instead of 9 everyday (and a quick trip to the gym before!)
