Two recipes in a week!  There has been some serious cooking going on around here!!  I LOVE granola but struggle to find delicious store-bought varieties that taste delish and have minimal ingredients/sugar.  So… I make my own!   I tweak the recipe almost every time, adding different dried fruits, nuts, spices but I love this one below!



2 cups oats

1/2 cup (each) chopped walnuts, pecans, and almonds

1/4 – 1/2 cup honey (I use 1/4 but I like my food low on the sweetness scale!)

1 teaspoon cinnamon

1/2 tablespoon vanilla extract

1/2 cup raisins

1/2 cup dried apricots (the ones from California are the best) chopped

1/4 cup sunflower seeds


Preheat oven to 300F.  Spray cookie sheet with non-stick spray (or use my fav, non-stick tin foil).  Mix ingredients on cookie sheet (except raisins and apricots). (TIP: Combine honey and vanilla extract before pouring over dry ingredients.)  Cook for 30 – 45 minutes.  Stir at 20 minutes.  Add cranberries and raisins with 10 minutes remaining, and stir.  (TIP:  If you like your granola in “bunches”, combine a couple of egg whites together and pour over granola prior to baking.)

I eat my granola with milk, almond milk, plain greek yogurt, or by itself!!
