TIP – Using a dedicated pair of kitchen scissors to snip dried fruit and herbs like basil and parsley makes the job easier. Keep in your knife drawer and ONLY use for food!


TIP – Did you know there was such a thing as non – stick foil? If not, I think I may have just changed your life!!


These bars are AMAZING.  I made a batch this weekend and they are all gone and I would like to say I was helped but I certainly was not.  They are sweet, a little sour, crunchy and chewy all at the same time.  I like to eat one before a workout for some carb-induced energy or in the afternoon I am lagging a little.  I am a huge proponent of eating whole foods with as few ingredients as possible!  (Preferably only one!)  For this recipe, I used peanut butter made with only roasted peanuts, dried fruit with no added sugar, apple butter with only apples and cinnamon, and cereal with minimal ingredients.



3/4 cup chopped pecans

2 1/2 cups bran cereal crushed! (I used a plastic bag and my good old fists for this one.) (FYI – gluten bugs me so I used a gluten free corn flake with only three ingredients!)

1/2 cup quick or old – fashioned oats

1/3 cup honey (you definitely can cut back on this, the dried fruit sweetens these bars delightfully!)

1/2 cup golden raisins

1/2 cup apricots

1 1/2 cups dried apples, finely sliced (or cut)

1/2 cup peanut butter (chunky or creamy works great!)

1/2 cup apple butter (apples and cinnamon are the only ingredients!)

1/2 teaspoon cinnamon

1/2 cup roasted sunflower seeds


Line bottom and sides of 8 -inch square pan with foil.  Heat dried fruit and honey on medium-high heat until boiling.  Once boiling, reduce heat to medium and stir in peanut butter until melted.  Then add cinnamon, apple butter, oats, sunflower seeds and pecans.  Last but not least, stir in crushed cereal until incorporated.  Scoop mixture into pan and press down FIRMLY with a spatula.  Refrigerate for two hours and enjoy!
