I am ALWAYS on the quest for a new, healthy energy bar that has only a few, healthful ingredients and tastes delicious! I swear, it is impossible. I have tried and tried and failed and failed. So…. I FINALLY decided to make some of my own. These ones are seriously soo good. I was sitting next to my mom in the car eating one and was completely in shock and awe and how delicious they were. They tasted like the richest dessert ever and I really can’t describe in words how good it was. (FYI, I don’t eat tons of treats so maybe I just forgot what really great ones taste like… Whatever, moving right along…)  Here is the recipe (I am really proud I made up mostly, ok by “mostly” I mean getting lots of ideas from lots of great recipes!)


Special Equipment Needed:

Food processor


2 cups medjool dates (pitted and chopped)

2 cups unsalted cashews (chopped)

1/2 cups unsalted almonds (chopped)

1/4 cup cacao or cocoa powder (I used Wonderslim Wonder Cocoa.  WARNING – this stuff is for REAL chocolate lovers and is AMAZING.)

1/2 cup unsweetened coconut (I used the shredded kind)

1 pinch salt

2-3 tablespoons water

OPTIONAL: 1/2 cup dark chocolate chips (I always use 70% or more cocoa content)


Combine dates, cashews, almonds, cacao/cocoa powder, coconut, and salt into food processor.  Pulse until texture is course.  Add water a tablespoon at a time until mixture sticks together but is not sticky.  (I know that makes no sense now, but it will.)  If adding chocolate chips, place mixture in separate bowl and fold in chips.  Line a square/rectangular pan with parchment paper or tin foil (I use non-stick, it is the greatest) and press mixture firmly (really firmly, with your hands works best) to desired thickness.  (My recommendation is to make them 1 – 1.5 inches thick.)  Chill in the refrigerator for 1 – 2 hours.  Cut and serve!!

These bars are going to be a staple in my life.  Pre-workout, post-workout, first breakfast, second breakfast, elevenses, luncheon, afternoon tea, dinner, supper.  (That is for you, fellow Tolkien fans out there!)
